An original all pork-based ramen, the Tondaku Ramen at Bassanova Ramen is served with premium berkshire pig tonkotsu soup mixed with crushed sesame. Toppings are 2 or 3 slices of grilled porkloin chashu, kikurage (dried black mushroom), fried garlic and ginger, scallion, and nori (seaweed).

This bowl of deliciousness comes with thin noodles. Thin noodles are usually recommended for tonkotsu soup for its ability to absorb soup flavors. But you can ask the servers to change it to wavy noodles as desired, which I definitely recommend.

The soup is thick: I really mean it. It's the thickest I've tried in the city. But it's really creamy and flavorful to be honest. It goes well with the thin noodle and other toppings; it's just so good to indulge on a cold windy day.
