Tondaku Green Curry Ramen
Soup ramen, $15
Wavy noodles

This is the signature ramen of Bassanova Ramen; it's what the ramen shop is known for. The chef cleverly created a fusion in this bowl of noodles, mixing homemade green curry paste with his premium tonkotsu soup, topping the noddles with slices of porkloin chashu, spring greens, okra, red peppers, shrimp, and a sprinkle of fried garlic. No, the green curry is not spicy like the Thai green curry. It's mild and smooth. If you're still afraid of it being too spicy for you, you can ask for extra coconut milk in your bowl (general soup base is green curry paste, coconut milk, and tonkotsu soup).

Unfortunately, it failed to have a consistent quality earlier. Either it being too salty, or it having too little toppings. But the restaurant really listened to the customers and made adequate adjustments. It's less salty now, but still heavy flavored that you need to drink water often. However, I do recommend trying this signature ramen because you won't find it anywhere in NYC.
